CLASSIC CALISCO PUNCH
Here’s our shake on the classic Pisco Punch. Originally created in San Francisco, this is the oldest known formal pisco cocktail and the reason that pisco was adored by Californians for decades.

Ingredients
• 2 oz. Calisco
• 1/2 oz. lemon juice
• 1/2 oz. pineapple syrup*
The Build
• Combine ingredients in a cocktail shaker with ice.
• Shake
• Strain over fresh ice
Garnish
Garnish with pineapple wedge.
Pineapple syrup:
To make your own, peel and core a pineapple and cut the flesh into 1-inch cubes. Soak pineapple in a bowl filled with one quart of gomme syrup or rich simple syrup (time?) and strain.
