CLASSIC CALISCO PUNCH
Here’s our shake on the classic Pisco Punch. Originally created in San Francisco, this is the oldest known formal pisco cocktail and the reason that pisco was adored by Californians for decades.
"compounded of the shavings of cherub's wings, the glory of a tropical dawn, the red clouds of sunset and the fragments of lost epics by dead masters”
• 2 oz. Calisco
• 1/2 oz. lemon juice
• 1/2 oz. pineapple syrup*
• Combine ingredients in a cocktail shaker with ice.
• Strain over fresh ice
Garnish with pineapple wedge.
To make your own, peel and core a pineapple and cut the flesh into 1-inch cubes. Soak pineapple in a bowl filled with one quart of gomme syrup or rich simple syrup (time?) and strain.
