The National cocktail of Mexico, the Paloma was originally made famous by the legendary Don Javier at his bar La Capilla in Pueblo de Magico de Tequila, this is the drink of legends and love and lore. Don Javier was a great and noble man whom we got to meet on a few occasions and this is a toast to his great spirit, his love of life, and his massive heart.
• 1.5 oz Calisco
• .5 oz fresh lime juice
• 3-4 oz grapefruit soda
• Pinch of sea salt (optional)
• Pour Calisco and lime juice over ice
• Top with grapefruit soda
• Fresh lime wedge
